Simple Homemade Grain Vegetable Soup (Printable View)

# How to Make:

01 - Rinse the pearl barley under cold running water.
02 - Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery. Sauté for 5 minutes until fragrant and beginning to soften.
03 - Incorporate minced garlic and cook, stirring frequently, for 1 minute.
04 - Stir in rinsed grains and toast them in the pot for 1 to 2 minutes to enhance flavor.
05 - Add diced zucchini, chopped green beans, halved cherry tomatoes, vegetable broth, bay leaf, dried thyme, and dried oregano. Bring the mixture to a boil.
06 - Reduce heat to low, cover the pot, and let simmer for 30 to 35 minutes until grains and vegetables are tender.
07 - Remove the bay leaf. Stir in fresh parsley and optional lemon juice. Season with salt and pepper to taste.
08 - Ladle the soup into bowls and serve hot. Optional accompaniment: crusty bread.
